Honey Pastries (Pestiños)

Ingredients:

  • 1 kg of flour mixed with 10% flour
  • 200 ml of extra virgin olive oil
  • 220 ml of fine wine
  • Zest of one lemon
  • Ground cinnamon
  • Salt
  • Extra virgin olive oil for frying

Instructions:

  1. Heat the olive oil with lemon zest and let it cool.
  2. In a large bowl, add the cold oil, wine, and a pinch of salt. Mix and incorporate the flour until you get a dough that can be rolled out. Let it rest for 15 minutes.
  3. Using a rolling pin, make small squares by joining two points and fry them.
  4. Roll them in sugar and cinnamon (when they are still warm) or in a mixture of honey diluted with a little water or syrup.
